ROASTED RADICCHIO WEDGE

Salad Ingredients:

2 heads of radicchio

Salt and Pepper to taste

3 Tbls Lima Ranch Olive Oil

Optional:

Capers

Small tomatoes (cherry, grape, etc.)

Preheat oven to 400*.

Slice radicchio lengthwise and place face down on sheet pan covered with parchment paper.

Drizzle olive oil over the top of the radicchio and sprinkle with salt and pepper. Add capers and tomatoes if you feel like it.

Roast for 12 minutes, or until starting to wilt and slightly crisp, turning once in oven.
